Mix the following ingredients together and let stand overnight-
1 lb. sultanas raisins ½ lb. red glazed cherries
½ lb. green glazed cherries 2/3 cup mixed fruit
1-19oz. can crushed pineapple and juice amaretto to soak
In the morning: Dust the fruit with ¼ cup all-purpose flour
Mix together: ¾ cup softened butter 1cup white sugar
Add 3 eggs, one at a time, beating after each egg.
Sift together and add to the butter mix and add:
2 ¼ cups all-purpose flour [reg. or Gluten free]
1 tsp. salt
2 tsp. Baking Powder
Add: ¼ lb. slivered almonds 1 tsp. vanilla
½ tsp. almond extract
Add fruit mixture and blend well.
Use a 10” cake pan lined twice with oiled brown paper. Bake for 2 ½ hours at 300F until a toothpick comes out clean.
Note: Put a dish of hot water in the oven while baking.
To make this cake Gluten Free, Substitute G/F Flour Mix #1
Cool and wrap in cheesecloth soaked in amaretto.
